Mango Cake With Whole Wheat flour

Summer is on its peak and its the season of king of fruits “Mango”. it just amazes me everyday how many recipes can be created using this one fruit. I mangoes and everyday I keep trying making something new with eat. Be it smoothies or fruit salads or cake, add mango to it and it can adds an amazing taste to anything and that pleasant aroma of mango just makes everything delicious.

Today I tried making a mango cake using whole wheat. i do not like using maida(all purpose flour) in my recipes and i try to refrain from it as much as I can. Do try this recipe at home. Its yummy, healthy and very delicious.

Ingredients

  • 1 whole wheat flour
  • 1/2 cup mango puree
  • 1/2 cup milk maid (condensed milk)
  • 1/2 cup ghee (clarified butter)
  • 1 tsp baking powder
  • 1/2 tea spoon baking soda
  • 3 tsp icing sugar
  • 1 tsp vanilla essence
  • 1/2 cup milk
  • few almond cuttings for garnish (optional)

Directions

  • To make mango puree – Take 2 medium sized mango and blend them in a blender. Use Alphonso if possible it gives a nice texture to the cake but you can use any mango available.
  • Take a big bowl and start mixing wet ingredients.
  • First add mango puree and ghee. Whisk them together.
  • Now add milkmaid and vanilla essence. Mix everything together.
  • now Sieve Whole wheat flour, baking powder, baking soda and sugar (adjust sugar based on mango’s sweetness and your taste).
  • Mix everything well
  • Add 1/2 cup milk gradually and whisk into a smooth batter of semi thick consistency. If you feel batter is too thick add more milk.
  • Take a greased cake mold and pour cake batter. tap the mol to even out batter.
  • Add few almond cuttings on top.
  • Preheat oven at 180 degree Celcius for 10 minutes.
  • Put the cake mold in oven and bake at 180 degree Celcius for 30 minutes (You cab adjust baking settings based on your oven or microwave)
  • You can even bake on stove using a wok ( Preheat some salt in a wok for 7-8 minutes and then put cake mold on a stand inside wok. Cover and bake)
  • Check if cake is done using a toothpick. if its done toothpick will come out clean.
  • Let cake cool completely before transferring out of mold.
  • Garnish with some raw mangoes and mint leaves (optional)
  • Enjoy the chutney.
